Is there a way to disable the n900 from automatically charging when it's first connected to a computer?
b/c i don't necessarily want to charge it every time i link it to a computer.

Also, of course I'm working on the assumption that--like many rechargeable devices--it is not beneficial for the battery's ultimate longevity to recharge unless the battery is empty or near empty.

i don't think it is possible to do this unless u wanna run the N900 with no battery when plug into the laptop then yes, but anyways, charge and using the battery when it is not at empty does have an effect BUT it is not a BIG effect since it might lower battery life as little as 2% consider your battery will not run at maximum aka it ran out faster then wat it suppose to

but then again , Life is not perfect as to charge a battery so don't worrie and go ahead and use it and charge it

You are right.. fully discharge before re-charging once in 10 cycles, you should be good.
